Date Protein Bars

INGREDIENTS

2 cups dates (soaked in 2 cups warm water for 5-10 mins)
3 cups rolled oats
2 cups vanilla or cookies and cream whey protein powder
6 Tbsp milk
zest of one lemon (finely grated)

Line a pan/tin with glad-wrap and spray with coconut oil or olive oil.

Place oats in food processor and process to a fine power (mine had a few chunks, it was all good)

Add the protein powder, blend, then add the dates, milk and zest.

Process until the mixture kind of sticks to itself around the sides of the bowl.

If your food processor is a bit small (like mine was), tip the mixture into a large bowl and mix with your hands.

Transfer the mixture into the prepared tin. Cover with some non-stick baking paper and smoosh it down flat (i rolled it with the coconut oil spray bottle!)

Pop it in the fridge to set for at least half an hour.

Lift it out with the liner, or flip it over onto a chopping board.

Cut it up into 12 bars.
