Tomato and Turmeric Mini Quiches

Ingredients:

  • 4 large eggs
  • ¼ cup milk Kefir (or cream or milk/milk substitute of
    choice)
  • 2 rashers bacon, diced (omit for vegetarian)
  • 1 tomato, diced
  • ¼ cup grated mozzarella (omit for dairy-free)
  • 1 Tbsp. Turmeric powder
  • 1 Tbsp. nutritional yeast
  • 1 tsp. Minced garlic
  • Pepper to taste
  • Pink salt to taste
  • Optional chilli oil or chilli flakes
  • Optional basil oil or fresh basil

Method:

  1. Preheat oven to 180.
  2. Combine all ingredients in a medium sized bowl.
  3. Scoop mixture into prepared muffin tins.
  4. Bake for about 15-20 minutes until cooked through.
